Beet, Kale, Apple and Butternut Salad with Ginger


Beet, Kale, Apple and Butternut Salad with Ginger

1 large beet, about baseball size
Chunk of butternut squash (I didn’t weigh it, about the same size as the beet)
2 tablespoons olive oil, divided
1 bunch kale, tough stems removed, chopped fine
3 inch knob of ginger root, peeled and grated (about 1/4 cup grated ginger)
Juice from 1/4 lemon
Salt/pepper
1. Spiralize the beet and butternut squash into thin noodles. Toss with one tablespoon of olive oil and bake at 400 for 15 minutes or until tender.  (these can also be eaten raw)
2. Spiralize the apple into thin noodles and place in a large mixing bowl. Add the chopped kale, the roasted beet and butternut, and the ginger. Drizzle with the remaining tablespoon of oil, add the lemon juice, and massage/toss to mix everything well. Season to taste with salt and pepper.    ( Brags or raw coconut Aminos soy free seasoning sauce is nice with this too.)
 let sit an marinate for a while the kale will become softer.....

Almond butter chocolate brownie


Ingredients
1 jar creamy almond butter
2 organic eggs
1/2 cup organic cacao powder
1 tbsp vanilla extract
1/2 tsp Celtic sea salt, fine
1 cup dark chocolate chips (soy free and dairy free)
1 tsp non-aluminum baking soda

Directions
Blend almond butter until smooth with a mixer or hand blender.

Blend in eggs, then add Yacon and vanilla.

Add in and blend cacao, Celtic sea salt and baking soda.

Fold in chocolate chips, reserving 1/8 cup to sprinkle on top of brownies.

Pour batter into pan.

Bake at 325 degrees for 35-40 minutes. Keep an eye on brownies.

coconut black rice pudding


Why black rice? Check out the health benefits:
Black rice is a good source of minerals, including iron, as well as fiber and has a nutritional profile somewhat similar to brown rice. The presence of anthyocyanins gives it a nutritional edge over brown rice.
What are anthocyanins?
Black rice gets its dark color from the presence of flavonoid pigments known as anthocyanins, plant based pigments with strong antioxidant properties. Anthocyanins are the same pigments that give many dark red and purple berries such as blackberries, dark cherries, and raspberries their rich color and health benefits. According to Dr. Zhimin Xu, Ph.D., an associate professor at Louisiana State University Agricultural Center, in Baton Rouge, "black-rice bran has an advantage over blueberries, because blueberries still contain a high level of sugar." Best of all, according to Joe Vinson, Ph.D., a professor of chemistry at the University of Scranton, in Pennsylvania, "Some antioxidants in brown rice are fat-soluble, while Anthocyanins are water-soluble and can therefore reach different areas of the body.(2)"
Anthyocyanins are being studied for their role in preventing a variety of chronic diseases including cancer, diabetes, heart disease, and Alzheimer's disease. Much of their benefit appears to stem from their anti-oxidant and anti-inflammatory properties.
Another added benefit black rice may help prevent heart attacks. In 2008, a group of scientists studied the effects of Anthocyanins on the heart. This study, which was published in the Journal of Nutrition and used mice as its primary source, concluded that Anthocyanins are capable of preventing the progression of atherosclerotic plaques, the main cause of most heart attacks, in the main arteries of the heart. The study also established that Anthocyanins play a key role in lowering triglycerides. Most astonishing of all was the finding that Anthocyanins are just as effective in lowering cholesterol levels as the prescription drug Simvastatin, a drug used to lower cholesterol levels (2).

Black Rice Pudding

Ingredients:
  • 1½ cup water 
  • 1/2 cup ground black rice
  • 2 cups Hemp milk (or any other milk)
  • 1/3 cup raw honey (more if you have a sweet tooth)
  • 1 tsp. vanilla 
  • 1/2 cup shredded coconut
Directions:
Bring water and ground rice to boil in medium saucepan, cover and simmer at low heat for 8-10 minute until most of water is absorbed.
Add milk, honey and vanilla. Cover and bring to boil. Cook on low heat 35 to 45 min. or until thickened, stirring occasionally.
Remove from heat; stir in coconut flakes well blended. Pour into glass dish. Garnish with coconut flakes. Cool slightly. Refrigerate for 2 hours or until chilled.

10 Energy Boosting Herbs

Ginseng
This herb's Latin name, Panax which means "all-heal" speaks of the natural belief that ginseng could provide an all around remedy for just about any ailment including reducing stress, improving immune system and promoting youthfulness. These are all needed so you can draw more energy from your body for other activities than having it fight infections. [1] Scientists have long found ginseng to be an adaptogen which means unlike caffeine-rich beverages, ginseng actually nourishes rather than strains the adrenal cortex to allow it to produce energy the way your body is naturally designed to do so. [2] Consequently, one study in 2002 found ginseng to be helpful for increasing libido and sexual performance due to ginsenosides chemicals it contains. [1]

Green tea
Like ginseng, green tea is known for its many beneficial effects. Recent studies show that apart from being anti-cancer and helping you slim down, the antioxidants in green tea also prevent premature ageing to leave you with more energy. Licorice

Known to boost the body’s immune system,reishi mushroom  is a powerful herb that is claimed to be effective in enhancing one’s energy level. In addition to that, reishi mushroom is widely believed to be beneficial in promoting general well being.
Some researchers believe that reishi mushroom contains powerful compounds that make it effective in dealing with insomnia, asthma, fatigue, coronary heart disease, type II diabetes, chronic hepatitis B, rheumatoid arthritis and certain types of cancer. [11]

- Meat and water of 1 young coconut
- 1/2 bunch of celery
- 1/2 cup brazil nuts, blended to a powder
- 1/8 cup olive oil
- 1/4 red onion
- dash of salt
…blend all together
…add water til creamy consistency as you are blending
…add dash of salt and 1/4 onion finely chopped

- 1/2 cup almonds, soaked
- 1 avocado
- 1 tablespoon carob powder /(or cacao or cocoa)
- 1 mint leaf
- 1 strawberry
- 1/8th cup water
…Soak 1/2 to 1 cup of raw almonds in one cup of spring water for about four hours.
…Drain the water and put the almonds in the blender
…Blend almonds for about a minute on low progressing to high until they are as blended as can be
…Add avocado, raw carob powder, honey, and one eighth cup of spring water
…Blend again until smooth
…Serve in a bowl with a mint leaf and a strawberry on top!

The frenzy over kale has turned from foodie buzz to eater roar. Around the country everyone is talking about kale. As a physician, nothing could please me more. Kale represents an important lesson for all us eaters about the power of food choices to transform our health. Sure, let's disclose my bias right away. My new book 50 Shades of Kale(Harper/Wave 2013,) co-authored with Chef Jennifer Iserloh, is just out. It is a gorgeous tribute to our muse kale and at its core a food prescription aimed to improve your brain health.
So what's all the kale hype about?
I love recommending kale for three fundamental reasons: Kale tops the charts of nutrient density, possesses incredible culinary flexibility, and is easy to grow almost anywhere. My ultimate measure of a food is its power to support brain health, and it is clear that more kale in your diet means a happier, healthier, sexier you -- all the basic signs that your brain is running well.
How does kale do this? What's the miracle in that crunch? Let's start with the power of phytonutrients, molecules in plants that do amazing things. One called sulfurophane travels from your kale smoothie to your liver where it amps up your body's natural detox power. Another called kaempferol is truly the fountain of youth -- it turns on the genes that promote longer life. (Move over red wine resveratrol.) Add to this mix carotenoids, which Harvard University just linked to one's overall sense of optimism, and glucosinolates, a known cancer fighter, and it is clear that kale is good medicine. Just step into the"Farmacy."
Brain health depends on picking the right fats in your diet, as the brain is about 60 percent fat. One vital set of fats most eaters need more of is the omega-3s, which happen to be the main kind of fat in kale. The plant-based omega-3 ALA (alpha-linolenic acid) is linked to numerous health benefits like lowering the risk of depression and diabetes. Both diabetes and obesity wreak havoc on the brain and kale is a great first step to fighting both. High blood sugar ages blood vessels and brain cells more quickly and fat cells create "pro-inflammatory" signals and frankly, who wants an inflamed brain? The fiber in kale is naturally filling and also promotes better gut health. And kale is a naturally low-carb food, so there is no spike in blood sugar.
The brain depends on essential vitamins and minerals to function. By these traditional measures of nutrient density, kale is at the top of the charts. A cup of raw kale has just 33 calories, yet you get a huge dose of vitamin C (134 percent RDA), pro-vitamin A (206 percent RDA), and a vitamin K (684 percent RDA). Those are some hefty numbers, but what is with all that vitamin K?! We don't hear much about this essential vitamin, but this is a nutrient to watch. Long associated with blood clotting, vitamin K is a powerful anti-oxidant that protects fat. It is a key co-factor need to make the specialized fats called sphingolipids that create the structure of our brain cells, and it promotes brain cells being more resilient by influencing gene expression. Vitamin K is also needed for bone health, and kale happens to be a great source of another bone-builder. Studies of calcium absorption from kale have shown its absorption to be superior to milk! That's because unlike many other greens such as spinach, kale has almost no oxalates that impair absorption. Kale also has a lot of protein for a leafy green. Add to this iron, folate, and vitamin B6, all needed to make brain molecules like serotonin and dopamine, and it is clear that kale is brain food.
Think kale is a trendy foodie food? Kale has always been a farmer food as it is easy to grow, resistant to pests and drought, and provides food late into the winter. Once kale endures a frost, the leaves become slightly sweeter. The hardy plant yields fresh greens late into the winter. You don't have to be a farmer to produce small kale crop for yourself, you just need a sunbeam and a window box. Kale can be used to cook everything from raw salads to soups to cocktails. With so many health benefits and so many ways to prepare it, it is no wonder kale is a staple around the world from Scotland to Kenya.
A Vermont folk artist T-shirt designer was recently sued for his hand-printed shirts that read: Eat More Kale. He is accused of infringing on the trademark of a certain fast food restaurant that promotes eating more chicken. But suggesting what people should eat for health is a really medical intervention. Plus, can anyone claim ownership of this phrase "eat more" except for perhaps Hippocrates himself. ("Let thy food be thy medicine and thy medicine be thy food.) So take this as medical advice* for your brain health: Eat More Kale and know you are building a better brain.
*If you take blood thinner or have an issue with blood clotting, contact your physician before increasing your kale intake, as it can interfere with anti-clotting medications like warfarin.

Everything in, Salad, and Spicy C juice

  • RAINBOW CHOPPED SALAD & SPICE-C JUICE
  •   SALAD
    INGREDIENTS
    (Serves 4-6)
    1 large head romaine lettuce, cored and chopped
    1 head red cabbage, thinly sliced
    1 handful parsley, stemmed and finely chopped
    1/4 cup cilantro leaves, stemmed and finely chopped
    1 apple, cored and chopped in cubes
    1 Asian pear, cored and chopped in cubes
    1/4 cup wakame or hijiki soaked for 15 minutes, rinsed, and drained
    1 sheet nori, cut into thin strips
    2 tablespoons dulse flakes
    1/2 head cauliflower, chopped into small florets
    1 cup hazelnuts, coarsely chopped
    1 cup pomegranate seeds (optional)
    1 avocado, peeled, pitted and sliced into cubes
    1/2 cup dried apricots, finely diced
    1/4 cup sunflower seeds (optional)
    3 tablespoons apple cider vinegar
    2 tablespoons olive oil or hazelnut oil
    1/4 teaspoon sea salt
    Pepper, to taste
  • DIRECTIONS
    This recipe is by no means exact. This idea can be applied to almost any variety of fruits, vegetables, seaweed, herbs, nuts and seeds. Think of it as the ultimate bowl of nutrient-dense goodness. Just toss with a simple vinaigrette and you have an amazing meal.
    Toss all ingredients together. Allow to marinate at least 15 minutes before serving.
  • JUICE INGREDIENTS
    (Serves 1-2)
    1 quarter fresh pineapple
    1 orange
    1/2 handful cilantro
    1/2 small jalapeño, seeded
  • DIRECTIONS
     This combination of pineapple and orange is a mega dose of vitamin C, a powerful cold and flu fighter. Pineapple provides additional benefit with the enzyme bromeliad which helps suppress coughs and loosen mucus. Jalapeños eliminate sinus congestion and reduce sinus headaches. Everything about this juice makes it a flu-fighter.
    Process all ingredients through juicer.

Can Lyme disease really be cured - parts 1-3


This is the first in a series on Lyme Disease and other infections. Bacteria-focused Treatments in Lyme Disease May be Incorrect. The argument of whether bacterial and other microbes are the ultimate cause of diseaseand their complete annihilation the only cure has raged since Pasteur and Bechamp debated it in 1908.

Pasteur of course believed in the bacteria as the root of infectious disease. Bechamp believed that it was the weakness in the body that enabled bacteria to cause disease and that the strong, healthy body would naturally prevent bacteria from causing disease even if one swallowed a test tube full of highly virulent Tuberculosis bacteria, which he did just to prove the point. He did not get Tuberculosis. So how does this play out today with superbugs, such as Lyme borrelia and its common coinfections?

In most natural and conventional Lyme disease treatment philosophies the focus of every treatment revolves around the killing of bacteria and coinfections. Unfortunately, this narrow view of health, the kill-the-bug-at-all-cost philosophy, often completely trashes the body worse than the disease would have in many cases.

Whether the treatment is conventional antibiotics, botanical antimicrobial supplements, or antimicrobial rife-frequencies all of these treatment focus on the “bugs” as the ultimate cause of dis-ease, and their annihilation the ultimate cure. Is this treatment focus correct?

Clinical research suggests that in the many of the people who experience long-term recovery from chronic Lyme disease (CLD) the bacteria and coinfections played only a secondary role in their recovery.

The focus of this tip is to propose a bio-centric, instead of microbe-centric focus in the treatment of people suffering from what is generally called CLD.

While many doctors and people can point to remissions in individuals, brought about by antibiotic-type treatments, the ultimate role played by these drugs/supplements is over-glamorized, while the restorative functions of the human body is downplayed or ignored altogether. Health restoration is a function of the body, not a function of a drug.

In an illness where all LD laboratory tests demonstrate a high, false-negative rate, even in profoundly sick LD cases, the extensive antibiotic treatment and subsequent finding of a negative lab test means very little to validate the effectiveness of the treatment.

In my opinion, having interviewed thousands of people treated primarily with long-term, natural, and conventional antibacterial medications, the vast majority of people report that they have nowhere near the quality of life they once enjoyed.

While bringing down the population of offending microbes is important, their complete annihilation is not ultimately what creates the restoration of optimum health

Interestingly, when I spoke with the owners to two of the top Lyme research laboratories, each told me that they had never seen anyone's blood tests completely clear of the Lyme bacteria, even after years of antibiotic cocktails, rife treatments, botanical formulas, homeopathic remedy, or silver products. Yet, many of the people tested had regained their quality of life for many years and were no longer considered sick.

It turns out we all have Strip bacteria in our respiratory tract, but we may never have "Strep throat." This same Strep bacteria we were told could kill us...and it could in the right body environment.

It is the same with LD. A person may always have the bacteria yet never have the disease as long as they maintain a healthy condition.

Just testing positive to having a certain bacteria or virus does not mean you will come down with a disease from that bug. Nor are you a ticking time bomb.

Treat the bugs and more bugs will follow. Treat the human condition and health will follow.

Can Lyme disease really be cured? This is the third in a series on Lyme disease. 

The question of whether or not Lyme disease can be cured is a recurring


 question that is asked of every doctor who is faced with a person suffering

 from the disease. 

The term “cure” is almost taboo in the healing arts profession. No doctor that I


 know of is willing to say they can cure any illness…especially not Lyme

 disease.

Before we just say an absolute “no” that Lyme disease is incurable lets see


 what the best medical dictionaries define the word “cure” as meaning. After all

 these medical dictionaries are the basis of what even the most agnostic

 doctors hold up as “truth.”


The following definitions are taken from Dorland’s Medical Dictionary and


 Stedman’s Medical Dictionary.


CURE

1. Restoration of health; recovery from disease

2. A method or course of medical treatment used to restore health.


3. An agent, such as a drug, that restores health; a remedy

4. Something that corrects or relieves a harmful or disturbing situation.

Reading these definitions one immediately notices that at no time does the


 word cure mean all the bacteria are gone. 



A patient of mine said it best on a Lyme forum, “Antibiotics are for killing, not


 healing.” Now doctors may read this and say the antibiotic “killing” of the

 bacteria creates healing by eliminating the cause of the disease…but in their

 own scientific scrutiny does this line of thought hold up to its claims? Not 

according to the Journal of the American Medical Association (JAMA), the

 worlds leading, peer-reviewed, medical journal. 

Articles in the JAMA encourage doctors to stop treating every suspected

 infection with antibiotics. This is because international research, which is cited

 by the Centers for Disease Control and Prevention, have demonstrated that a

 doctor will usually prescribe antibiotics for a “routine” sinus, ear, eye

, respiratory infection for approximately 7-10 days. What the research found is

 that even without prescribing antibiotics that the infection was resolved with

 7-10 days.

So the medical research and the medical definition of cure show that a “cure”


 is not the absence of bacteria. The people experienced a “Restoration of

 health” without killing all of the bacteria. And yes, for those of you who might

 say the body killed the bacteria via the immune system, this too is not borne 

out by the medical research that reveals the Strep or whatever bacteria it was

 is still in the body, only it is now non-pathological.
