Cucumber and Sweet Red Pepper Salad

- generous ½ cup chopped cucumber
- 1 chopped Roma tomato (about ⅓ cup)
- 2 tbsp. chopped onion
- ⅓ cup chopped sweet red bell pepper
- 2 packed tbsp. fresh chopped parsley (stems removed)
- ¼ cup plain Greek-style dairy free yogurt, or low-fat plain Greek yogurt ( note- I use bio goat)
- couple splashes of lime juice
