Makes around 10 cookies
- 2 cups of nuts or nut meal – (mine are brazils and hazel nuts)
- 1/4 cup of coconut oil (melted)
- 1/2-1 vanilla bean (or tsp of extract)
- 2 tbs Agave nectar, raw honey or pure maple syrup
- 4 tbs lucuma
- pinch raw salt
Raw short bread cookies are so easy to make, I just throw all the ingredients into my blender and whiz up until well mixed and resembles cookie dough.
I use some wax paper to roll out, it helps to keep the dough formed.
Shape how you like or use a cookie cutter for your raw shortbread cookies. Place on dehydrator tray, I like them to be a little crispy so dehydrate for 4 -6 hours, but this is not absolutely necessary, if you don’t have a dehydrator, just put them in the fridge.

In addition to satisfying our sweet tooth, lucuma is gluten-free and loaded with antioxidants, fiber, niacin, iron, fibre, carbohydrates, B vitamins and minerals – the perfect sweetener for our cakes and biscuits, giving a caramel, maple flavour – good in smoothies too.
